Several of you asked about the recipe for these cupcakes
So here it is.
They are wonderful cupcakes with a gentle coconut flavor.
Very easy to make, and tastes so good with the chocolate coconut and ice cream on top.
Makes 12 large cupcakes
1/2 cup unsalted butter, softened
1/2 cup sugar
3 eggs
1 cup plain flour
1/4 cup shredded coconut
4 tablespoons good quality cocoa powder
1 1/2 teaspoon baking powder
1/2 cup shredded coconut
1 teaspoon cocoa powder
ice cream, for serving
Preheat oven to 350F.
Beat butter and sugar until pale.
Add eggs, one at a time. Mix well.
Add flour, coconut, cocoa and baking powder.
Mix well.
Pour the batter into a 12 cup buttered cupcake tin.
Place in oven and bake for 12-15 minutes.
Cool on a wire rack.
Toss the shredded coconut in cocoa powder.
Serve the cupcakes with the chocolate coconut and ice cream.

Oh my. I adore chocolate and coconut anything, and these look just about perfect. Love the idea of ice cream, or even ganache-covered seven minute frosting, in high hat cupcake style. But that just may be me gilding the lily a tad!

WOW, i think this is something id like to try. Two of my faves..im really into a cereal right now that has cocoa and coconut ...so this is ideal!!
